I like the logo with the deer a lot (Medford rum), and would be interested in seeing a spin on this for Mellö Beans, maybe with a little more color/pizzazz/ whatever makes it more marketable and less sepia and ... open to deer-less logos, and generally open to any amplifications that would make for a more marketable logo, and include a cool looking woodland ... A bird, bear, stag, or some such ... Doesn’t necessarily have to include an animal, but I am partial to ... I have no background in marketing but imagine designers here do, so open to ...
